Crispy Potato Skins


  • 1Kg Medium Red Delight Potatoes, Unpeeled
  • 2 Tablespoons Oil

Coocking Method

First Of All Preheat Oven To 200°C/180°C Fan-Forced. Using A Fork, Prick Potatoes All Over. And Wrap Each Potato In A Piece Of Foil To Enclose. Then Bake For 40 Minutes Or Until Tender. Cool For 10 Minutes.
After This Remove And Discard Foil From Potatoes. Now Cut Each Potato In Half Lengthways. Leaving A 1Cm Border, Scoop Out Potato Flesh, Being Careful Not To Go All The Way Through To Base. Cut Each Potato In Half Again To Form Quarters. And Place On 2 Large Baking Trays. Drizzle With Oil And Season Well With Salt And Pepper. Gently Toss To Coat. Then Bake For 20 To 25 Minutes Or Until Golden And Crisp.
